In this Japan jam series, we have a healthy recipe that you can whip up with your love ones on on their birthday if they are health conscious or love fruits! Or you can try this out for a weekend desert but still want to remain healthy using our Japan Ehime Golden Kiwi Jam
Ingredients
- 150g Digestive biscuits
- 50g Melted butter
- 1 Banana
- 3 Kiwi( 3 chopped, 1 sliced )
- 3 tsp of Japan Ehime Golden Kiwi Jam
- 1.5 tsp of Lemon juice
- 250g of plain Yogurt ( or vanilla yogurt )
- 10g of Gelatine ( boiled in water )
Steps:
1. Crushed up biscuits in a bowl and add in melted butter
2. Stir the mixture until well combined. Spread the mixture over a 20cm cake mould and flatten out the mixture. Store it in the fridge for 30mins to firm up
3. Sliced up bananas and lay it over the biscuit mixture after it has firmed up
4. Chopped up 2 pcs of kiwi and sliced up 1 pcs of kiwi to set aside for topping
5. In a saucepan, heat up the chopped kiwi along with 3 tsp of kiwi jam. Add in 1 spoon of lemon juice
6. Leave to boil until the kiwi starts to release the juices and stir gently
7. Take the mixture of the heat and leave to cool one side
8. Pour the mixture into the bowl of yogurt and add in the gelatine
9. Mix everything with a spatula
10. Cover the banana layer with the kiwi and yogurt mixture
11. Level slightly with a spoon to smoothen it out
12. Leave in fridge to cool for 6hrs
13. Take out of fridge, and mould to add kiwi slices on top.
